ITALIAN BRUNCH TORTE Serves 12
2 tubes crescent rolls, divided
1 tsp. olive oil & 1 pkg. fresh spinach
1 cup fresh sliced mushrooms & 7 Eggs
1 cup parmesan cheese & 2 tsp. Italian seasonings
1/2 lb. thinly sliced deli ham
1/2 lb. each thinly sliced pepperoni or salami & provolone cheese
2 jars (12 oz.) roasted sweet red peppers, drained sliced and patted dry
1. Use greased 9” springform pan with a double thickness of heavy foil. Wrap foil around pan. Unroll 1 tube of rolls and separate into triangles. Press onto bottom of prepared pan to form a crust sealing seams well. Bake 10-15 mins. 2. In large skillet, heat oil on med. heat, add spinach & mushrooms, cook till tender. Drain on paper towels. In bowl, whisk 6 eggs, parm cheese, Italian seasoning & 1/8 tsp. pepper. 3. Layer crust with half of ham, salami, provolone, peppers, & spinach mixture. Pour on half of the egg mixture. Repeat layers, top with remaining egg mixture. 4. Unroll and separate remaining crescent dough into triangles. Press together to form a circle and seal seams, place over filling. Brush remaining egg over top. Bake 1 hour @350.
